2 cups mashed potatoes
8 oz. Pkg. Cream cheese
½ small onion, finely chopped
2 eggs, beaten
1 Tbsp. flour
¼ tsp. salt
1/8 tsp. pepper
3 oz. Crushed onion rings
Beat all ingredients except onion rings for 2 to 3 minutes at medium speed. Pour into greased casserole dish. Top with crushed onion rings. Bake at 300 degrees for about 35 minutes.
