Bourbon Balls

12 oz. Box Vanilla Wafers, crushed

1 cup chopped pecans

3 ½ ozs. Flaked coconut

1 can Eagle Brand milk

¼ cup bourbon

Mix all ingredients.  Chill for 4 hours or overnight.  Roll into balls and roll in additional coconut.

Brown Sugar Bar Cookies

1 1/2 cups brown sugar

½ cup butter

2 eggs

1 tsp. vanilla

2 cups flour

½ tsp. baking powder

Cream butter and 1 cup of the brown sugar thoroughly.  Add 1 egg and vanilla.  Mix in flour and baking powder.  Pat into cookie pan.  Beat other egg and spread over dough.  Sprinkle with remaining ½ cup of brown sugar.  Bake at 350 degrees until brown.

Mama-T used to make these and we all loved them.

Brown Sugar Refrigerator Cookies

1 ½ cups brown sugar

1 cup margarine or Crisco shortening

2 eggs

3 cups flour

1 cup chopped pecans

3 tsp. baking powder

1 tsp. vanilla

Cream margarine and sugar.  Add eggs, vanilla and nuts.  Mix flour and baking powder together and add to creamed mixture.  Make into rolls, roll in waxed paper and refrigerate or freeze.  When ready to bake, slice in thin slices and bake on greased cookie sheet at 375 degrees until lightly browned.

This is one of Mama-T’s recipes that has always been one of my favorites.

Brownies

1 ½ cups flour

2 cups sugar

5 Tbsp. Cocoa

1 tsp. Baking powder

1 tsp. Salt

1 cup cooking oil

4 eggs

3 Tbsp. white Karo syrup

2 tsp. Vanilla

2 cups chopped pecans

Mix all ingredients except pecans and mix well with mixer.  Stir in pecans.  Pour into greased and floured 9 x 13 pan.  Bake in 325 degree oven for about 45 minutes.

Kitty Upton gave me this recipe in 1972.  I haven’t bought a box of brownie mix since then.

Chess Squares

Mix:

1 egg

1 pkg. Yellow cake mix

1 stick butter or margarine (melted)

Press in 9 x 13 pan.

Mix:

3 eggs

1 box powdered sugar

8 oz. Package cream cheese

1 tsp. vanilla

Pour in pan over first mixture.  Bake at 350 degrees for 30 to 40 minutes.

German Chocolate Brownies

1 pkg. German sweet chocolate

1 stick oleo

4 oz. Cream cheese

1 cup sugar

3 eggs

½ cup plus 1 Tbsp. flour

½ tsp. baking powder

¼ tsp. salt

½ cup chopped nuts

1 tsp. vanilla

Melt ½ stick oleo and German sweet chocolate on low heat, stirring constantly.  Cool.  Cream ½ stick oleo, cream cheese and sugar.  Add eggs and beat well.  Add chocolate mixture and dry ingredients.  Beat well and add nuts and vanilla.  Pour into greased and floured pan.  Bake in 350 degree oven.

Grandma’s Tea Cakes

1 cup shortening

1 ½ cups sugar

3 eggs

4 cups flour

2 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

¼ cup buttermilk

1 to 1 ¼ tsp. vanilla

Cream shortening and sugar.  Add eggs, one at a time, beating after each addition.  Combine flour, baking powder, soda and salt.  Add to creamed mixture alternately with buttermilk.  Mix well.  Stir in vanilla.  Cover and chill for 1 hour.  Roll dough to ¼ inch thickness on a floured surface.  Cut with round cookie cutter and place on greased cookie sheet.  Bake at 350 degrees for 15 minutes or until edges begin to brown.  Sprinkle with additional sugar, if desired.

Found this one in a Southern Living magazine in July, 1990.  It’s very good.

Hidden Kiss Cookies

  • 1 bag (9 oz.) HERSHEY’S KISSES or KISSES WITH ALMONDS Milk Chocolates
  • 1 cup (2 sticks) butter or margarine, softened
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup HERSHEY’S MINI CHIPS Semi-Sweet Chocolate Chips

Directions:

1. Heat oven to 375°F. Remove wrappers from chocolate pieces.

2. Beat butter, granulated sugar, brown sugar and vanilla in large bowl until well blended. Add flour to butter mixture; blend until smooth. Stir in small chocolate chips. Mold scant tablespoon dough around each chocolate piece, covering completely. Shape into balls; place on ungreased cookie sheet.

Honey Bars

½ cup honey

1 cup sugar

1 egg

¾ cup cooking oil

2 cups flour

1 ½ tsp. Cinnamon

½ tsp. Salt

1 tsp. Baking soda

Mix well and then add:

1 cup chopped pecans

Pat into flat pan (10 x 15 works well).  Bake for 20 minutes at 350 degrees.  Remove from oven and frost immediately.

Frosting:

1 ½ Tbsp. warm milk

1 cup powdered sugar

1 ½ Tbsp. margarine or butter

1 tsp. Vanilla

Lemon Squares

2 cups flour

1 cup butter or margarine (melted)

½ cup powdered sugar

pinch of salt

Mix thoroughly and pat down smoothly in greased and floured 9 x 13 pan.  Bake for 20 minutes in 350 degree oven. 

While this is baking, combine:

4 eggs, beaten

2 cups granulated sugar

4 Tbsp. lemon juice

Remove crust from oven and spread immediately with lemon mixture.  Return to oven and bake for 25 minutes at 325 degrees.  Dust with powdered sugar while warm.  Cool and cut into squares.
